Green salad with nectarines, pecans and feta

    A delicious, summer salad made with fresh, ripe nectarines or peaches. Nice to serve with barbecued fish or steak.

    Serves: 2 

    • 1 tablespoon of olive oil
    • 2 nectarines, stone removed and sliced (with skin on)
    • 1 shallot, finely chopped
    • 2 tablespoons red wine vinegar
    • 1 1/2 tablespoons of olive oil
    • salt and pepper, to taste
    • 100g mixed salad leaves
    • basil leaves, sliced into strips
    • 25g feta, crumbled
    • a handful of pecans, coarsely chopped

    1. Heat a tablespoon of olive oil in a frying pan; add nectarine slices and fry until they are slightly caramelised.
    2. Meanwhile, mix the chopped shallot with red wine vinegar and olive oil in a bowl. Season with salt and pepper.
    3. Place the lettuce in a bowl; pour dressing on top and toss to coat. Add the nectarines, basil leaves, feta cheese and pecans on top.
