Irish fry up

    You could face anything after this hearty breakfast of eggs, mushrooms and tomatoes fried with bacon and butter. Slices of Irish soda bread are pan fried and served on the side.

    Ingredients
    Serves: 2 

    • 6 thick rashers bacon
    • 2 tablespoons butter
    • 4 eggs
    • 2 small tomatoes, sliced
    • 200g whole mushrooms
    • 4 slices soda bread

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Lay the bacon slices in a single layer in a large frying pan. Fry over medium heat until it begins to get tinged with brown. Fry on both sides. Remove from pan, but save dripping.
    2. Melt butter in frying pan. Crack eggs into pan, being careful not to break yolks. Place tomato slices, mushrooms and bread in pan. Fry gently, stirring mushrooms and tomatoes occasionally. Keep everything separate. Turn bread over to brown on both sides.
    3. When egg whites are set, but yolks are still runny, dish half of everything onto each of 2 warmed plates, and serve immediately.

    It is not authentic until you add black and white pudding as well as baked beans (which I really hate on my breakfast to be honest). This is more an "Irish American breakfast".     Very authetic and quite similar to breakfast I once had in an Irish bed n'breakfast. Since I could not find back or Irish bacon as it is sometimes called, I used meaty slices of ham. To help keep the eggs whole and seperate, I fried the tomatoes and mushrooms in a seperate frying pan to make things easier.
