Bionicos (Mexican fruit salad)

    Bionics are Mexican fruit salads, drizzled with a 'crema' topping made from yogurt, sweetened condensed milk and creme fraiche. Any seasonal fresh fruit can be used. They originated in street food stalls in Guadalajara, Mexico, and are commonly topped with coconut flakes, raisins and granola.

    Serves: 4 

    • Crema
    • 75g plain yogurt
    • 75g sweetened condensed milk
    • 75g creme fraiche or Mexican crema
    • 1 teaspoon vanilla extract
    • Fruit salad
    • 150g diced cantaloupe
    • 140g diced papaya
    • 125g diced red apple
    • 150g sliced banana
    • 150g sliced strawberries
    • 60g granola
    • 70g raisins
    • 35g coconut flakes

    1. Mix yogurt, sweetened condensed milk and creme fraiche together in a bowl. Add vanilla extract and stir until well incorporated.
    2. Divide cantaloupe, papaya, apple and banana between 4 individual bowls, arranging them in separate sections. Place strawberries in the centre of each bowl. Top each bowl with some granola, raisins and coconut.
    3. Drizzle a few tablespoons of the crema mixture over each fruit bowl.
