Walnut and oat chocolate chip cookies

    These chocolate chips cookies are packed with nutritious ingredients like oats, rye flour, dried figs and walnuts. Call it a grown-up chocolate chip cookie and grab one for a quick afternoon pick-me-up!

    • 100g walnuts
    • 75g rye flour
    • 60g plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 100g oats
    • 200g finely chopped dried figs
    • 175g mini dark chocolate chips
    • 170g butter, at room temperature
    • 140g soft brown sugar
    • 1 egg
    • 1 teaspoon vanilla extract

    1. Preheat the oven to 180 c / Gas 4. Line 2 baking trays with baking parchment.
    2. Toast walnuts in a dry frying pan until fragrant, 3 to 5 minutes. Chop coarsely.
    3. Stir rye flour, plain flour, baking powder, bicarbonate of soda and salt together in a medium bowl. Mix walnuts, oats, figs and chocolate chips in a separate bowl.
    4. Beat butter until light and fluffy. Add brown sugar; beat to incorporate. Add egg and vanilla extract. Beat until smooth. Add flour and oat mixtures to the bowl. Mix on low speed until thoroughly incorporated.
    5. Roll tablespoonfuls of cookie mixture into balls and arrange on the baking tray about 5cm apart. Press down with the back of a large spoon to flatten cookies.
    6. Bake in the preheated oven until edges are set, about 16 minutes. Remove from baking trays and cool on a wire rack.
