    Serves: 8 

    • For the filling
    • 750g peeled and sliced apples
    • 100g caster sugar
    • 1 tablespoon plain flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • For the topping
    • 60g rolled oats
    • 100g plain flour
    • 110g soft brown sugar
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon baking powder
    • 110g butter, melted

    1. Preheat oven to 180 C / Gas 4.
    2. Mix apples, caster sugar, 1 tablespoon flour, cinnamon and salt together in a bowl; spread into a 20cm square baking dish.
    3. Combine oats, 100g flour, brown sugar, bicarb and baking powder together in a separate bowl; add melted butter and mix until crumbly. Crumble topping evenly over apples.
    4. Bake in the preheated oven until topping is lightly browned, 30 to 40 minutes.

    This recipe is better than most apple crisps I've tried, but I did find it a bit flawed, though I would make it again with some changes. It was overly sweet so I would decrease the sugar in the crumble part by one fourth cup.I do have to say that the texture was SUPERB. Another problem is that the cookie part tasted eggy. Weird because there is no egg in the recipe and I used only the freshest ingredients. Maybe I'll try with a different type of oat next time?     The topping on this was okay. Not the best I've made. I prefer cutting in the butter instead of adding it melted. I believe it makes it more crumbly but not less crispy.
