Lamb's lettuce with pan fried mushrooms

    Lamb's lettuce and mushrooms are a great salad combination, and topping it with walnuts give it a little bite.

    Ingredients
    Serves: 2 

    • For the salad dressing
    • 1 tablespoon balsamic vinegar
    • 1 1/2 tablespoons olive oil
    • 1/2 teaspoon caster sugar
    • salt and pepper
    • For the salad
    • 300g mixed fresh mushrooms
    • 75g lamb's lettuce
    • 1/2 red onion, sliced thinly
    • 1 small garlic clove, minced
    • 1 tablespoon olive oil
    • 2 sprigs parsley, minced
    • salt and pepper
    • 40g walnuts, chopped

    Method

    1. In a bowl stir all the ingredients for the dressing till smooth.
    2. Rub the mushrooms with kitchen paper and slice thinly.
    3. Wash, dry and sort lamb's lettuce.
    4. Heat olive oil in a large pan and fry mushrooms and noons till the begin to soften. Add salt, pepper, garlic and parsley. Continue frying for 30 seconds, then remove from the hob and let cool slightly. Toss with the dressing.
    5. Put salad on two plates, top with mushroom mix and sprinkle with walnuts.
