Pineapple iced tea

    Iced black tea mixed with pineapple juice shows off its Hawaiian roots and makes a refreshing non alcoholic summer drink.

    Serves: 8 

    • 950ml barely boiling hot water
    • 4 orange pekoe tea bags
    • 950ml ice cold water
    • 450ml pineapple juice
    • 120ml sugar syrup
    • 1 fresh pineapple, peeled, cored, and cut into wedges

    1. Pour the barely boiling hot water in a large heat proof jug and add the tea bags. Steep the tea 2 to 4 minutes. Remove the tea bags, and pour in the ice water. Pour in the pineapple juice. Refrigerate until thoroughly chilled, about 1 1/2 hours.
    2. Pour the tea over ice, garnish with pineapple wedges, and serve.

    Gentle pineapple flavored tea - light, refreshing, sweet enough but not *sickening* sweet. But the pineapple flavor definitely dominates. This would be better kicking up the tea to probably six bags.
