A special yet easy dinner party starter with courgette - a gluten free terrine with courgette, mascarpone cheese and smoked salmon. You can additionally crumble a little goats cheese on top.

3 tablespoons mascarpone cheese

a few basil leaves, minced
2 slices smoked salmon, cut into strips

Preheat your oven to 180 C / Gas 4. Cut the courgettes lenthwise into 3mm slices. Place them on a plate and cook in the microwave at high setting till soft, about 5 minutes.
In the meantime beat eggs and mascarpone, salt (only very little, the salmon is already salty) and pepper. Add basil and salmon and stir to mix.
Butter a terrine mould or a loaf tin. Arrange the courgette slices in the mould, then pour the egg mixture over them. Bake in the preheated oven till the terrine is set, about 45 minutes. Let cool, then refrigerate till serving. The terrine should be well chilled before cutting.
