This fruit dessert can be made with apples, pears, or the last peaches of the summer. It is perfect for a gluten free diet, or if you are looking for a light dessert.

1 (750ml) bottle Muskateller wine
1 glug honey, to taste
1 star anise
10 black peppercorns
2 to 3 cardamom pods
1/2 vanilla bean or 1 tablespoon vanilla extract
10 fennel seeds (optional)
1 small cinnamon stick
4 apples (Gala or another cooking apples), pears or firm peaches
3 tablespoons cornflour (optional)

Add wine, honey and spices in a small saucepan, just large enough to fit the fruit but not too big so that the fruit is fully immersed in liquid. Bring to the boil and cook over medium heat for 5 minutes.
Meanwhile peel the apples or pears but keep them whole. If using peaches, dip them in boiling water for 1 minute, then remove the skins. Place the fruit in the wine and let simmer for 20 minutes, turning the fruit a few times. When it can be easily pierced with a knife, remove them from the wine. Transfer to a serving plate.
Now you can either bring the poaching liquid to the boil and let it reduce till thick and syrupy. Or, you can dilute the cornflour in a little water and add it to the liquid. Whisk till fully incorporated, then let cook for a few minutes till thickened. Pour over the fruit.
