Pasta tuna salad with broccoli

    This is a versatile pasta salad with tuna, broccoli and peppers. Also very suitable for a barbecue.

    Serves: 4 

    • 400g tricoloured pasta
    • 2 red peppers (or 1 orange and 1 red pepper), cut into strips
    • 350 to 400g broccoli, cut into florets
    • 2 (175g) tins tuna in water, drained
    • 3 tablespoons capers
    • 2 tablespoons olive oil
    • 2 tabelspoons red wine vinegar
    • 2 tablespoons soured cream or mayonnaise (optional)
    • salt and pepper

    1. Cook the pasta according to the instructions on the package, but add the broccoli florets 4 minutes before end of cooking time. Drain.
    2. In a large salad bowl mix the peppers with the tuna, capers, pasta and broccoli.
    3. In a small bowl whisk olive oil, wine vinegar, salt and pepper together. Add 1 to 2 tablespoons soured cream or mayonnaise if you want to make a creamier pasta salad. Add the dressing to the pasta salad and serve cold or lukewarm.
