In a large bowl, combine the mince, egg, onion, milk and bread ( or cracker crumbs). Season with salt and pepper to taste and place in a lightly greased 23x13cm loaf tin, or form into a loaf and place in a lightly greased 23x33cm baking tin.

In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
This was soo quick and easy to make! I didn't have any mustard so my sauce was just ketchup and brown sugar, bit it still worked! Next time I make it I'll also pack it a bit firmer in the loaf tin. I have to say that it only served 4 adults in our family, and we had it with homemade mash and fresh veg....it was yummy and loved by us all

Trying the recipe again as we enjoyed it so much last time... this time adding butchers sausage meat to bulk it out and help keep it moist... and fresh rosemary as it was lurking in the fridge x
I have just cooked this, it is yummy. Absolutely love it and is really easy to do. I didn't add the ketchup sauce on top, I just did ordinary gravy and served this with mixed veg and baby boiled potatoes. Gorgeous.
Something else.
Using my food processor, I added very finely chopped tomatoes and carrots as I like to sneak in veggies wherever possible. Also I added chopped roast ham from yesterdays dinner, as I had it anyway and it added to the taste as I used pork mince instead of beef.
