Slow cooker yellow plum jam

    This plum jam is very simple but it takes time. Yellow Mirabelle plums are very juicy so they will break down considerably.

    Serves: 6 

    • 2.5kg ripe yellow plums, pitted
    • 200g sugar, more to taste

    1. Wash plums and place enough plums in the slow cooker to fill it to about 3/4 full. Add sugar and mix. Cover and let cook overnight at the lowest setting.
    2. The next morning, add the rest of the plums. Cook uncovered for 5 to 6 hours.
    3. Increase the heat to the maximum setting and cook for a further 6 to 8 hours, again uncovered till the jam has thickened. Add more sugar to taste. Puree the jam if you prefer it to be smooth.
    4. Pour the hot jam into sterilised jars and turn them over so they are sealed. Let cool, then store upright in a cool and dark place.
