Pear and plum jam

    Pears and plums make a lovely late summer/early autumn jam. The cooking time depends a lot how ripe and juicy the fruit is. It sets as it cools down.

    Makes: 6 jars

    • 1kg plums
    • 1kg pears
    • 2kg caster sugar

    1. Wash plums, cut in half and remove stones; chop.
    2. Wash pears, cut in half and remove core; chop.
    3. Place fruit in a large pot with 1.2kg of the sugar. Bring to the boil, then reduce heat and cook for 15 minutes, stirring often.
    4. Remove from the heat and let cool, then put back on the hob and cook for a further 10 to 25 minutes till thickened.
    5. Pour jam in sterilised jars and close with lids. Place in a cool and dark place.
