Crustless courgette bacon quiche

    This courgette quiche is especially easy because you don't need to make a crust. It can be served for brunch, lunch or tea, and it can be reheated.

    Serves: 6 

    • 375g courgette, grated
    • 1 large onion, minced
    • 3 rashers bacon, diced
    • 120g grated cheese
    • 125g self raising flour
    • 120ml oil
    • 5 eggs, lightly beaten
    • salt and pepper, to taste

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 C / Gas 4.
    2. Combine all ingredients in a bowl. Pour into a greased tin or pie plate.
    3. Bake in preheated oven till browned, about 40 minutes.
