Crustless courgette tomato quiche

    A tasty courgette quiche without a pastry base, chock full of grated courgette, cheese and bacon then topped with fresh sliced tomatoes.

    Serves: 4 

    • 5 eggs
    • 100ml vegetable oil
    • 400g grated courgette
    • 1 onion, grated
    • 125g self raising flour
    • 120g grated cheese
    • 3 rashers bacon
    • 1 tomato, sliced

    1. Preheat your oven to 190 C / Gas 5. Grease a pie tin.
    2. Beat together eggs and oil. Mix in the courgette and onion. Whisk in the flour then fold in the cheese. Lay the bacon in the pie tin. Pour in the egg mixture then place a layer of tomatoes on top.
    3. Bake in oven until egg is set and top is golden, about 30 minutes.
