Banana split cupcakes

    This decadent banana cupcake is a take on the banana split dessert! It's topped with whipped cream, slices of banana, chopped nuts, a glace cherry and a drizzle of chocolate! These are best, filled close to the time when you plan to serve them. Only fill the amount of cupcakes you need. Keep any left over unfilled cupcakes in an airtight container - eat plain or ice as desired within a day or two. Any filled cupcakes will need to be refrigerated.

    • Cupcakes
    • 225g self raising flour
    • 220g caster sugar
    • 2 eggs
    • 125ml light vegetable oil
    • 125ml milk
    • 225g mashed ripe bananas
    • 1 teaspoon vanilla essence
    • Filling
    • 500g thick vanilla custard
    • 2 punnets small strawberries
    • Topping
    • 600ml whipping cream
    • 150g icing sugar
    • 1 teaspoon vanilla extract
    • Garnishes
    • chocolate flavour ice cream topping
    • sliced banana
    • glace cherries
    • mixed chopped nuts

    1. Preheat oven to 180 C / Gas 4. Line 2 cupcake tins with 20 paper cases.
    2. Cupcakes:

    3. Place self raising flour, caster sugar, eggs, vegetable oil, milk, mashed banana and vanilla extract into a large bowl; use an electric mixer to beat the cupcake mixture until well combined. Spoon into paper cases, about 3/4 full.
    4. Cook in preheated oven for 20 minutes, or until golden on top and a skewer inserted into the centre of a cupcake comes out clean. Cool the cupcakes completely on a wire rack.
    5. Filling:

    6. Using a teaspoon, scoop out a hole in the middle of the cupcakes without breaking through to the bottom.
    7. Place a heaped teaspoon of thick custard in the hole of a cupcake; push a small strawberry into the custard. Repeat with remaining cupcakes.
    8. Topping:

    9. Whip the cream, icing sugar and vanilla together until thick and holding shape. Pipe or spoon cream onto the top of the cupcakes.
    10. Garnishes:

    11. Drizzle with the chocolate ice cream topping. Decorate with sliced banana, glace cherries and nuts.
