Chocolate and walnut banana bread

    A sweet and delicate banana bread made from ripe bananas with flecks of walnut and dark chocolate.

    Makes: 1 loaf

    • 3 very ripe bananas
    • 50g butter, melted
    • 2 eggs, separated
    • 200g caster sugar
    • 300g plain flour
    • 2 teaspoons bicarbonate of soda
    • 250g walnuts, finely diced
    • 100g dark chocolate, finely diced

    1. Preheat oven to 180 C / Gas 4. Lightly grease a loaf tin.
    2. Mash the bananas and combine with melted butter and egg yolks; mix well. Beat the egg whites until fluffy; add the sugar and continue beating until sugar has dissolved and mixture is stiffer.
    3. In a mixing bowl, combine the flour and bicarbonate of soda; add the mashed bananas and mix well. Gently fold in the beaten egg whites. Add walnuts and chocolate; mix gently.
    4. Transfer cake mixture to the loaf tin. Bake for 50 minutes in preheated oven. Let cool and garnish with prepared chocolate sauce and sliced bananas.
