Radicchio pear salad with walnuts and blue cheese

    A salad with fresh pears that takes just a few minutes to assemble. If you don't like blue cheese, use Parmesan instead.

    Serves: 6 

    • 2 heads radicchio, leaves torn in small pieces
    • 2 pears, peeled, cored and diced
    • 60g Gorgonzola dolce or another blue cheese, crumbled
    • 20 walnut halved
    • For the dressing
    • 60ml olive oil
    • 3 tablespoons red wine vinegar
    • 1 1/2 teaspoons caster sugar
    • 1 1/2 teaspoons Dijon mustard
    • 1 garlic clove, minced
    • 1/2 teaspoon salt
    • freshly ground pepper

    1. Arrange radicchio on a large plate and evenly distribute pear, cheese and walnuts over it.
    2. Stir all ingredients for the dressing till smooth, or add to a jar and shake till well mixed. Drizzle dressing over salad and serve.
