Naked raspberry cake

    Naked cake with fresh raspberries is just beautiful. If you are making it for Christmas, you can add a Christmas tree using an ice cream cone.

    Serves: 8 

    • 1 (300g) tub cream cheese, at room temperature
    • 125g butter, at room temperature
    • 300ml whipping cream
    • 140g caster sugar
    • 2 to 3 Génoise sponges
    • 3 to 4 (150g) boxes fresh raspberries
    • For the Christmas tree decoration (optional)
    • 1 ice cream waffle cone
    • green food coloring
    • sugar pearls

    1. For the filling beat the cream cheese and butter with an electric mixer till light and fluffy. Add sugar and cream and continue beating till the cream stands in stiff peaks.
    2. Spread the Génoise sponges except one with the cream mixture, then cover with raspberries but reserve a few for the decoration. Fill the remaining cream mixture in a pastry bag fitted with a star tip. Place the layers on top of each other, ending with the reserved sponge.
    3. Decorate the top of the cake with the reserved cream filing and raspberries.
    4. To decorate the cake for Christmas, add a few drops of green food coloring to the remaining filling and stir to obtain a homogenous color. Cover the top layer with the white cream filling and place an ice cream waffle cone upside down in the centre. . Decorate the ice cream cone with the green cream filling to make it look like garlands on a Christmas tree then add sugar pearls and place a raspberry on top of the "tree". Refrigerate the cake till serving.
