Roasted vegetables in the air fryer

    Believe it or not but the air fryer actually still caramelises vegetables, without overcooking them. Try this recipe as a side dish or salad.

    Ingredients
    Serves: 4 

    • 1 red pepper, seeded and cut into 2cm pieces
    • 1 yellow squash, cut into 2cm pieces
    • 1 courgette, thickly sliced
    • 100g fresh mushrooms, cleaned and halved
    • 1/2 sweet onion, cut into wedges
    • 1 tablespoon extra-virgin olive oil
    • salt and pepper to taste

    1. Preheat an air fryer according to manufacturer's recommendations.
    2. Place red pepper, squash, courgette, mushrooms and onion in a large bowl. Add olive oil, salt and black pepper; toss to combine.
    3. Place vegetables in an even layer in the air fryer basket. Air fry the vegetables until roasted, about 20 minutes, stirring halfway through cooking time.
