This apple and chocolate chip brownie traybake is a delicious twist on a classic treat if you have a few apples that are past their sell by date!

4 medium apples - peeled, cored and diced
2 tablespoons apple cider vinegar or lemon juice
200g caster sugar
140g soft brown sugar
2 large eggs
1 teaspoon vanilla extract
225g butter, melted and cooled
250g plain flour
20g cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 pinch sea salt
2 tablespoons plain flour
75g chocolate chips

Preheat the oven to 180 C / Gas 4. Grease a traybake tin and dust with flour.
Place apples in a bowl and sprinkle with vinegar. Set aside.
Whisk caster sugar, brown sugar, eggs and vanilla extract together in a large bowl until well combined. Add melted butter and whisk until smooth. Add flour, cocoa powder, baking powder, cinnamon, nutmeg and salt. Whisk until brownie mixture is well combined.
Sprinkle 2 tablespoons flour over apples in the bowl and toss to coat. Fold floured apples and chocolate chips into the brownie mixture (it will be thick). Spread mixture evenly into the prepared traybake tin.
Bake in the preheated oven until top is no longer shiny and a skewer inserted in the centre comes out clean, about 30 minutes, but check after 25 minutes so it doesn't overbake.
