Red pepper za'atar pasta

    Pasta is flavoured with red peppers, lemon juice and za'atar (a Middle Eastern herb blend) in this quick and easy vegetarian pasta recipe.

    Serves: 2 

    • 225g penne pasta
    • 4 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 2 medium red peppers, diced
    • 1 tablespoon za'atar

    Method

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
    2. Pour olive oil and lemon juice into a pan over medium heat; stir until combined, 1 to 2 minutes. Add red peppers and za'atar. Cook, stirring occasionally, for 5 minutes.
    3. Drain pasta and return to the pot. Pour red pepper mixture over pasta; mix well.
