Chocolate shortbread wheels

    These are very pretty chocolate shortbread biscuit wheels that make a lovely food gift for friends, relatives or teachers.

    Makes: 14 biscuits

    • 140g plain flour
    • 50g caster sugar
    • 120g butter
    • 1 tablespoon cocoa powder
    • 1 tablespoon grated chocolate


    1. Preheat oven to 180 C / Gas 4. Lightly grease 2 baking trays.
    2. Sift all but 2 tablespoons of flour into a bowl, then add the sugar. Rub in butter until the mixture is crumbly. Divide the mixture in half. Work in the remaining 2 tablespoons of flour to one half; add cocoa and grated chocolate to the other half. Knead each portion well with your fingers to form a smooth dough.
    3. Turn onto a clean work surface surface that has been dusted with cornflour; roll out each portion to 1/2cm thick circles. Using a 6cm round cutter, cut out 7 circles from each piece of rolled out dough. Out of these circles, cut two more circles, one 3cm, and one 1.5cm. Now you should have fourteen 6cm rings, fourteen 3cm rings and fourteen 1.5cm circles.
    4. Create and arrange 'wheels' on prepared baking trays by starting with the largest rings, then alternating the colours to fill in. You should end up with 7 biscuits that have a chocolate ring on the outside, a plain ring in the middle and a chocolate circle in the centre; and 7 biscuits that have a plain ring on the outside, a chocolate ring in the middle and a plain circle in the centre.
    5. Bake for 12 minutes. Leave on baking trays for 2 minutes before removing them with a flat knife. Cool completely on wire racks.
