Saffron poached pears

    Pears are poached in a white wine syrup with saffron, vanilla, cinnamon and orange zest. Delicious served with crunchy amaretti biscuits or biscotti.

    Serves: 6 

    • 250ml water
    • 250ml white wine
    • 225g caster sugar
    • 1 vanilla pod, sliced in half
    • ½ cinnamon stick
    • ½ teaspoon saffron threads
    • 2 teaspoons orange zest
    • 6 firm pears, peeled but left whole with stalk

    1. Place water, wine, sugar, vanilla pod, cinnamon stick, saffron and orange zest in a heavy-based pot; bring to the boil, stirring occasionally, until the sugar has dissolved.
    2. Arrange pears in a pot where they can fit upright without falling over.
    3. Pour liquid over pears and poach, covered, for 1½ hours, or until they are cooked through and glazed.
    4. Remove pears from poaching liquid and arrange on serving plates. Boil the poaching liquid over high heat until it is almost a syrup; pour syrup over the pears and serve.
