Stewed pears in red wine

    Ripe but firm pears work best for this recipe. These poached pears go really well with rice pudding.

    Serves: 4 

    • 1 bottle of red wine
    • 200g granulated sugar
    • 1 (5cm) cinnamon stick
    • 1 star anise
    • 6 cloves
    • 1 lemon, sliced
    • 6 ripe but firm pears, peeled and cored with stalk intact

    1. Pour red wine, sugar, cinnamon, star anise, cloves and lemon slices into a saucepan; bring to the boil and simmer over low heat until the sugar is dissolved and the liquid starts to turns syrupy.
    2. Place the pears upright in a saucepan; pour the wine syrup over the pears, cover the pan and let them simmer slowly for about 30-40 minutes.
    3. Carefully remove the pears from the pan and place them on individual serving plates. If necessary, boil the syrup for a bit longer to thicken. Pour syrup through a sieve into a jug; pour syrup over pears and serve.
