This is the simplest cake I've ever made. Great to make with the kids, especially if you use it for buns or fairycakes. I'll leave it up to you to ice or serve with fresh cream and strawberries.
Preheat the oven to 180 degrees C (gas mark 4). Grease and flour a 23cm tin or line a bun tray with paper cases.

In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until the mixture is smooth. Pour or spoon mixture into the prepared tin or bun cases.

Bake for 30 to 40 minutes in the preheated oven. For fairy cakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

just made these again since they were a hit on mothers day and my mums ill now so i thought i would cheer her up with a nice batch of yummy cakes! they're in the oven now... this time i added chocolate chips to give it an extra spark.. i will review again when they're cooked.. thanks again!
This was a really really decent recipe. Mine came out very soft and very moist....the 2nd time around. The 1st time....was an opps on my part and left them in to long. So I can't judge for my mistake. But the 2nd attempt was spot on and I was totally pleased with how well they turned out.
we did some with vanilla and some without.. both worked out fine. can i just say, it makes way more than 12. we put all the mixture into 12 cases and when we took it out of the oven, they were huge and spread out and ruined ;( but we cut off the extra stuff and fed it to the dog (lol! i felt sick from licking the spoon on 3 other recipes and diesel liked it... lol) so thank you for this brill recipe! i would say it serves 18-20. i put some jelly tots and sprinkles on top so it really looks amazing now.. thanks! mum will be enjoying a nice plate full of cupcakes later thanks to you!
