Redcurrant chutney

    I used to make chutney only with blackcurrants but this year I tried with redcurrants and i like it even better!

    Makes: 2 jars depending on size

    • 300g redcurrant
    • 1 fresh red chilli, seeds removed and minced
    • 1 red onion, minced
    • 1 cooking apple, peeled, cored and grated
    • 50ml white balsamic vinegar
    • 2 oranges, juiced
    • 200g light soft brown sugar
    • 1 scant teaspoon salt
    • 1 teaspoon brown mustard seeds

    1. Wash currants and pop the berries off the stems using a fork.
    2. Add all ingredients to a heavy pot and bring to the boil. Reduce temperature and cook, uncovered, till the chutney chickens, about 1 hour.
    3. Fill piping hot chutney into twistoff jars and close jars immediately.
