Tropical fish cupcakes

    This recipe shows you how cupcakes can easily be turned into colourful tropical fish for a kids' birthday party. Or you can let the kids decorate the cupcakes themselves! You can add a few drops of blue food colouring to the vanilla icing so it looks like the sea.

    Serves: 12 

    • 12 plain cupcakes, cooled
    • 1 (400g) tub vanilla buttercream icing
    • 275g coloured milk chocolate sweets (such as M&M's(R))

    1. Ice each cupcake with a thin layer of buttercream; refrigerate the iced cupcakes for 30 minutes to make decorating easier.
    2. Remove cupcakes from the fridge and apply a second layer of buttercream. Separate sweets by colour.
    3. Place 1 brown sweet in the middle of one half of the cupcake for the eye. Add 2 red sweets for the mouth on one side of the cupcake. Place remaining sweets in vertical rows by colour on the other half of the cupcakes to resemble fish scales. Place 3 opposite the mouth as the tail.
