When I was a child we often had fondue when my parents had guests. I remembered that just recently so my mother looked for her old recipe, here it is:

Serves: 6
2 teaspoons cornflour
2 tablespoons kirsch
1 garlic clove
750ml dry white wine
450g Emmental cheese, grated
450g Gruyère cheese, grated
freshly ground pepper
white bread cubes

In a small bowl stir cornflour and kirsch till smooth.
Cut the garlic clove in half and rub the bottom and sides of the fondue put with the cut sides.
Heat wine in a pot on the hob. Gradually add the cheese whilst stirring in the shape of the number 8 till the cheese is melted. Make sure to scrape over the bottom so the cheese does not stick to the pot.
As soon as the cheese starts to bubble, stir in the cornflour mixture till fully incorporated. Season with pepper.
Rinse the fondue pot with boiling water to warm it and slowly tip the fondue into the pot. Place on the fondue burner and enjoy!
