Penne with asparagus and cooked ham

    To get out five a day I try to add as much veg to our pasta dishes as possible but you can also use less asparagus.

    Serves: 4 

    • 1kg asparagus
    • 4 tablespoons oil
    • 400g penne pasta
    • salt
    • 1 (100g) thick slice cooked ham
    • 100g frozen garden peas
    • peppercorns
    • freshly grated Parmesan

    1. Peel the lower part of the asparagus and cut off the ends. Cut asparagus into bite size pieces.
    2. Heat 2 tablespoons olive oil and fry asparagus till it starts to soften whilst turning often, about 4 to 5 minutes.
    3. Cook penne in salted water according to packet instructions till al dente.
    4. Dice ham. Heat remaining oil and fry ham till lightly coloured, then add peas and asparagus. Stir till heated through. Season with salt and pepper.
    5. Serve on top of penne, sprinkled with Parmesan cheese.
