Gluten free Christmas chocolate biscuits

    This soft, gluten free, lightly spiced chocolate biscuit dough made from ground almonds, sugar, egg whites and grated chocolate is perfect for cutting out into festive shapes at Christmas.

    Makes: 40 cookies

    • 300g caster sugar
    • 300g ground almonds
    • 50g dark chocolate, grated
    • 1 teaspoon cinnamon
    • pinch ground cloves
    • 3 egg whites
    • 1 teaspoon lemon juice
    • extra sugar, as needed

    1. Combine the caster sugar, ground almonds, grated chocolate, cinnamon and cloves in a mixing bowl and mix well. Add the egg whites and lemon juice and knead into a firm dough.
    2. Sprinkle a working surface with sugar and roll out the dough to about 1cm thickness. Cut out shapes and place on the baking tray. Let rest in a cool place 2-3 hours.
    3. Preheat oven to 150 C / Gas 2. Lightly grease a baking tray.
    4. Bake in preheated oven for 20 minutes. The cookies should still be slightly moist inside.
