Sweet German mustard

    Sweet mustard is a Bavarian specialty that you can easily make at home. This recipe makes about 6 jars, I give most as gifts and keep one.

    Makes: 6 jars

    • 1.75L water
    • 250 to 500ml white wine vinegar
    • 1kg caster sugar
    • 1 onion, peeled
    • 10 to 12 whole cloves
    • 400g yellow mustard powder
    • 100g brown mustard powder

    1. In a bowl bring water with vinegar and sugar to the boil.
    2. Insert the cloves into the onion and place into the liquid. Let cool.
    3. Remove onion and stir in mustard mixture.
    4. Cover and let rest for 5 days, then fill into jars and close with a tight fitting lid. The mustard will mellow over time.
