Brussels sprouts with browned butter and almonds

    In this recipe the Brussels sprouts are not cooked whole, but pulled apart, which takes more time but it makes a more refined dish.

    Serves: 4 

    • 750g Brussels sprouts
    • salt
    • 50g butter
    • 60g chopped or ground almonds
    • 1 punch ground caraway seeds

    1. Remove the outer leaves from the Brussels sprouts and discard. Wash the Brussels sprouts then pluck the leaves individually, Remove the core and discard.
    2. Bring a pot with salted water to the boil and cook leaves till soft, about 6 minutes. Drain well.
    3. Melt butter in a frying pan over medium heat. Add almonds and fry till lightly browned, about 2 minutes. Add Brussels sprouts, stir to combine and reheat. Season with salt and pepper and serve immediately.
