Chicken stock from leftover chicken

    When you have leftovers from a whole chicken and/or all the parts you didn't use such as neck, heart, liver etc. don't throw them out, you can make a rich flavourful chicken stock from them. I freeze the stock, that way I have it handy whenever I need it.

    Ingredients
    Makes: 4 litres

    • 1 stalk leek
    • 1 to 2 carrots
    • 1 stalk celery
    • 1 large onion
    • chicken or turkey leftovers, skin removed
    • 1 teaspoon peppercorns
    • 1 bunch parsley
    • 1 bay leaf

    Method

    1. Chop all the veg into small pieces and add to a large heavy pot with the chicken leftovers, pepper, parsley and bay leaf and bring to the boil.
    2. Reduce heat and cover. Simmer for 1.5 to 2 hours. Strain and let cool, then refrigerate. The next day, remove the fat and refrigrate or freeze in the desired portions.

    Tip

    You can also use leftover turkey to make turkey stock.
