Roasted Brussels sprouts have so much more flavour than when they are boiled, and if you add bacon like in this recipe, it makes a delicious side dish for a warming winter meal.

500g Brussels sprouts
150g bacon (about 4 slices), cut into strips
1 shallot, sliced thinly

Wash and trim Brussels sprouts. If sprouts still have leaves on them and they are not wilted, reserve those and discard the rest. Remove the core, cut sprouts in half and place with the leaves and shallot in a bowl.
Fry bacon in a frying pan till browned and crisp. Remove from the pan, degrease on kitchen towel and set to one side.
Line a baking tray with greaseproof paper. Heat oven to 200 C / Gas 6.
Add Brussels sprouts, leaves and shallot to pan and stir well till evenly coated with the bacon fat. Spread in a single layer on the prepared baking tray.
Roast in the preheated oven for 15 minutes. Remove, turn and roast for a further 15 minutes. Transfer to a bowl season with salt and pepper and toss with bacon.
