Red wine chocolate pound cake

    The red wine makes this pound cake wonderfully moist.

    Ingredients
    Serves: 16 

    • 300g butter, softened
    • 300g caster sugar
    • 6 eggs
    • 300g plain flour
    • 4 level teaspoons baking powder
    • 4 teaspoons vanilla sugar
    • 1 1/2 teaspoons cinnamon
    • 1 1/2 teaspoons unsweetened baking cocoa
    • 125ml dry red wine
    • 150g chocolate sprinkles
    • chocolate icing (optional)

    Method

    1. Preheat oven to 160 to 180 C / Gas 3-4. Grease a tube or loaf cake tin.
    2. In a large bowl mix all ingredients except chocolate sprinkles with an electric mixer till smooth.
    3. At the end fold in chocolate sprinkles.
    4. Tip mixture into cake tin and bake till a tester comes our clean, 45 to 60 minutes.
    5. Let cool and spread with chocolate icing if desired.

    Tip

    You can also bake muffins from the mixture. They will require less time, start checking for doneness after about 30 minutes.
