Quick and easy plum cake

    This plum cake is especially delightful when served lukewarm and with lots of whipped cream.

    Serves: 12 

    • 5 eggs
    • 70g caster sugar
    • 180g butter, at room temperature
    • 90g icing sugar
    • 2 teaspoons vanilla sugar
    • 180g plain flour
    • 1 teaspoon baking powder
    • 1kg plums such as Victoria, washed, halved and pitted
    • whipped cream for serving

    1. Preheat oven to 170 C / Gas 3-4. Grease a springform tin.
    2. Separate the eggs. In a bowl beat egg whites till stiff, gradually adding sugar. Refrigerate until using.
    3. In another bowl beat butter with icing sugar and vanilla sugar till creamy. Gradually add egg yolks and beat till fluffy. Carefuly fold in egg white mixture.
    4. Sift flower and baking powder over mixture and tip into the prepared tin.
    5. Arrange plum halves with the cut side down on the base.
    6. Bake in the preheated oven till golden brown, about 45 minutes. Let cool till lukewarm and serve with whipped cream.
