Leeks in lemon sauce

    Leeks are one of my favourite veg. This lemon sauce is a nice change from the usual plain cream sauce.

    Serves: 6 

    • 1.5kg leeks
    • 1 tablespoon butter
    • 125ml vegetable or chicken stock
    • 2 tablespoons lemon juice
    • ½ teaspoon finely grated lemon zest
    • 2 tablespoons double cream
    • salt and pepper
    • 1 pinch sugar

    1. Trim to leek, removing the green part and discard. Cut leek in 5cm pieces and wash thoroughly.
    2. Melt butter in a large saucepan and fry leek till it starts to soften, stirring.
    3. Add stock, lemon juice and zest and cover. Cook till the leek is soft, about 5 to 10 minutes. Thick stalks take longer.
    4. Add cream and let reduce sauce a little without covering the pan. Season with salt, pepper and a pinch of sugar.
