Honigkuchen (German honey cake)

    This is a traditional German honey cake, which is usually baked in a loaf tin but if you have a pretty star shaped tin or another Christmas tin, you can use that as well, just make sure to adjust the baking time, as it might bake faster if the cake is flatter.

    • 250g honey
    • 125g dark brown soft sugar
    • 100g butter
    • 500g plain flour
    • 4 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1 teaspoon cardamom
    • 1 teaspoon ground nutmeg
    • 100g ground almonds
    • 1 pinch salt
    • 2 eggs

    1. Preheat oven to 180 C / Gas 4.
    2. In a saucepan heat honey with sugar, butter and 1 to 2 tablespoons water and stir till sugar and butter have melted. Remove from the hob and let cool.
    3. In a large bowl mix flour with baking powder, spices, almonds and salt.
    4. Beat eggs in a second bowl and add to the flour mixture together with the honey mixture, Stir well till smooth and evenly combined.
    5. Tip mixture in a well greased loaf pan and even out the surface with a spatula. Bake in the preheated oven for 75 minutes.


    Increase the amount of spices if you prefer a more intense flavour.
