Combine the flour, baking powder, bicarbonate of soda and salt in a bowl; set bowl aside.
In a separate bowl combine the buttermilk, sugar, oil and egg. With a spatula, mix the wet ingredients into the dry ingredients. Let pancake batter rest for about 30 minutes.
Heat oil in a heavy-based pan over medium heat. Pour about 3 tablespoons of batter into the pan and fry until the batter begins to bubble (about 1 1/2 minutes). Turn pancakes and cook on the second side until it golden brown. Repeat with remaining pancake batter.
