Leftover turkey Christmas nachos

    Festive nachos made with leftover roast turkey, cranberry sauce, green salsa and fresh coriander.

    Serves: 12 

    • 48 scoop-style tortilla chips
    • 275g shredded cooked turkey
    • 120g salsa verde
    • 200g grated Monterey Jack cheese
    • 100g cranberry jelly
    • 1 tablespoon lime juice
    • 75g soured cream
    • 1 small bunch coriander, coarsely chopped, or to taste

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with foil; arrange tortilla chips on it.
    2. Stir turkey and salsa together in a bowl. Fill chips with turkey mixture, then top with grated cheese.
    3. Bake in the preheated oven until cheese is melted and chips are golden, about 10 minutes.
    4. Meanwhile, stir cranberry sauce and lime juice together in a bowl. Top each chip with some of the cranberry-lime mixture and some of the soured cream. Sprinkle fresh coriander on top.
