Vegetarian Caesar salad

    This is a Caesar salad recipe without anchovy so it's suitable for vegetarians. And the homemade croutons are so much better than ready made.

    Makes: 4 Portionen

    • 1/2 baguette or 2 white rolls, sliced
    • 4 tablespoons olive oil
    • 1 to 2 garlic cloves, minced
    • 2 romaine lettuce hearts
    • 1 lemon, juiced
    • soy sauce
    • salt and pepper
    • olive oil
    • Parmesan cheese

    1. Preheat oven to 220 C / Gas 4.
    2. In a bowl stir olive oil with garlic and drizzle on bread. Place on a baking tray in a single layer.
    3. Bake in the oven till lightly browned on both sides, turning the slices once.
    4. Separate romaine lettuce into leaves, wash and dry.
    5. For the dressing stir lemon juice with soy sauce, salt, pepper and olive oil till smooth.
    6. Toss dressing with romaine lettuce.
    7. Arrange on plates. Top with the bread slices and sprinkle with shaved Parmesan.


    Add alfalfa or fresh minced herbs to the salad.
