Leek and cheese bake

    A rich cheesy gratin with leeks, feta, gouda and walnuts.

    Serves: 6 

    • 1.5kg leek
    • 175g feta, crumbled
    • 300g gouda, grated
    • 200g walnuts, coarsely chopped
    • 4 garlic cloves, minced
    • 75g creme fraiche
    • 75ml vegetable stock
    • 1 egg yolk
    • pinch nutmeg
    • pepper

    1. Cut off the green part of the leeks and discard or reserve for another use. Cut leek into 5cm pieces and wash thoroughly.
    2. Bring water to the boil in a large pot and cook leek for 2 minutes. Drain.
    3. Preheat oven to 200 C / Gas 6. Grease a gratin dish.
    4. Toast walnuts in a non greased pan till fragrant. In a bowl mix cheeses, walnuts and garlic.
    5. Alternate layering leek and cheese in the gratin dish.
    6. In a bowl stir creme fraiche with veg stock, nutmeg and pepper till smooth. Pour into dish and bake in the preheated oven till browned and bubbly, about 30 minutes.
