Swiss potato salad

    Similar to German potato salad, in Swiss potato salad (called Gummelisalat) the potatoes are tossed with the dressing whilst still warm so they fully absorb the flavour.

    Serves: 4 

    • 1kg salad potatoes
    • 1 onion, minced
    • oil
    • For the dressing
    • 1 teaspoon all purpose savoury seasoning
    • 1 teaspoon prepared mustard
    • pepper
    • 3 tablespoons white wine vinegar
    • 4 tablespoons vegetable oil
    • 100ml hot meat stock
    • minced chives

    1. Boil potatoes in salted water and peel whilst still hot. Cut into thick slices and place in a bowl.
    2. Heat oil in a frying pan and fry onion till translucent, do not let it brown. Toss with the potatoes.
    3. In a small bowl whisk all of the ingredients for the dressing till smooth, and add as much meat stock to make a thin dressing. Toss with the salad and sprinkle with chives. Serve immediately.
