One of my family's favourite recipes. Serve it with noodles and a green salad and you have a great weeknight dinner.

600g pork fillet
4 tablespoons oil
2 onions, minced
1 (250g) punnet button mushrooms, sliced
125ml white wine
125ml double cream
1 tablespoon Dijon mustard
1/4 teaspoon dried mixed herbs
1 to 2 teaspoons gravy granules

Cut fillet into 4x2cm strips.
Heat oil in a frying pan till very hot. Fry meat till browned. Season with salt and pepper. Remove from pan and degrease on kitchen towels.
Add mushrooms and onion to pan and fry whilst stirring, 5 minutes. Add wine and cream and deglaze. Stir in mustard and herbs. If sauce is too thin, stir in gravy granules and and let thicken. Sprinkle with chives and serve.
