    About this recipe: This sausage casserole is perfect for when you want to use up those peppers in the fridge (or anything else that's in there).

    Ingredients
    Serves: 3 

    • 6 pork sausages
    • 1 large red pepper, chopped
    • 1 large orange pepper, chopped
    • 1 large yellow pepper, chopped
    • 1 large onion, diced
    • 125ml passata
    • 75ml hot water, if needed
    • salt and pepper to taste

    Method

    1. In a large frying pan, brown sausage on medium heat. Remove from heat and cut into thirds.
    2. In a 2-litre baking dish, combine the sausages, peppers, onion, passata and hot water. Mix together until well combined, and season with salt and ground black pepper.
    3. Bake at 180 degrees C (gas mark 4) for 1 hour, stirring every 15 minutes.

    Really tasty casserole. I added some tomato puree to thicken and flavour it. Also added a clove of garlic and a little chopped fresh rosemay.... - 20 May 2012
