Sausage and pepper casserole
This sausage casserole is perfect for when you want to use up those peppers in the fridge (or anything else that's in there).
Ingredients
Serves: 3
- 6 pork sausages
- 1 large red pepper, chopped
- 1 large orange pepper, chopped
- 1 large yellow pepper, chopped
- 1 large onion, diced
- 125ml passata
- 75ml hot water, if needed
- salt and pepper to taste

- In a large frying pan, brown sausage on medium heat. Remove from heat and cut into thirds.
- In a 2-litre baking dish, combine the sausages, peppers, onion, passata and hot water. Mix together until well combined, and season with salt and ground black pepper.
- Bake at 180 degrees C (gas mark 4) for 1 hour, stirring every 15 minutes.
