Walnut maple biscuits

    Start mixing the biscuits the day before and leave to harden in the fridge, otherwise the mixture will be very sticky and difficult to roll out.

    Makes: 2 

    • 200g plain flour
    • 1 pinch baking powder
    • 1 pinch salt
    • 50g walnuts, coarsely chopped
    • 140g chilled butter, diced
    • 100g icing sugar
    • 1/4 teaspoon cinnamon
    • 70ml maple syrup
    • 150g walnut halves (about 50 pieces)

    1. In a bowl mix flour, baking powder and salt. Add walnuts, butter, icing sugar, cinnamon and maple syrup and mix till it holds together. Place in an airtight container with a lid and refrigerate overnight.
    2. Preheat oven to 175 C / Gas 4. Line a baking tray with greaseproof paper.
    3. Lightly dust working surface with flour and roll out mixture about 5mm thick. Cut out circles or other simple shapes and place on the baking tray, leaving some distance between them. If they don't fit on one baking tray, bake in two batches.
    4. Decorate each biscuit with a walnut halve.
    5. Bake in the preheated oven for 12 to 15 minutes.
