Almond traybake cake

    A speedy traybake cake with a moist buttermilk base and a crunchy almond topping. I often make it when we have surprise guests.

    Serves: 20 

    • For the base
    • 300g plain flour
    • 4 teaspoons baking powder
    • 300g caster sugar
    • 2 teaspoons vanilla sugar
    • 3 eggs
    • 300ml buttermilk
    • For the topping
    • 200g flaked almonds
    • 150g caster sugar
    • 150g butter

    1. Preheat oven to 180 C / Gas 4. Grease a deep baking tray or line with greaseproof paper.
    2. In a bowl mix flour and baking powder. Add sugar, vanilla sugar, eggs and buttermilk and stir till smooth and well combined.
    3. Tip into the prepared baking tray and bake in the preheated oven for 10 minutes.
    4. In the meantime heat butter and sugar in a small saucepan over low heat. Stir in almonds.
    5. Remove baking tray from oven and evenly spread mixture over base. Return to the oven and bake for a further 15 minutes.
