Egg, ham and tomato salad

    If you have hard boiled eggs left over, nothing easier than this egg salad.

    Serves: 4 

    • 4 hard boiled eggs
    • 250g soured cream
    • 4 tablespoons mayonnaise
    • 1 lemon, juiced
    • salt and pepper
    • 150g cooked ham, diced
    • 4 medium pickles, diced
    • 4 tomatoes, diced
    • 1 tablespoon minced chives

    1. Quarter or slice eggs. In a bowl stir soured cream and mayonnaise till smooth, add a dash of lemon juice and season with salt and pepper.
    2. Add ham, pickles and chives and toss with the dressing. Place eggs on top and let marinate in the fridge for 20 minutes. Serve with wholesome bread.
